I wanted to incorporate okra into a fritter that wasn’t fried, which, of course, is the antithesis of a fritter. Then I came up with the idea of baking beignet dough as the French do with their classic cheese puffs. I do believe this combination is about as “Bon appétit, y’all” as you can get!
MAKES 20 MEDIUM PUFFS
3/4 cup water
5 tablespoons unsalted butter
1/2 teaspoon coarse kosher salt
1/2 teaspoon crushed red pepper flakes, or to taste
1 teaspoon garlic powder
3/4 cup all-purpose flour
4 large eggs, at room temperature
4 ounces okra, stem ends trimmed, very thinly sliced
3/4 cup coarsely grated Gruyère
